Ultimate Veggie Skillet Nachos

Ingredients
- 1 bag Zack's Mighty Tortilla Chips
- 2 cups shredded cheese (Cheddar & Monterey Jack blend)
- 1 can (15 oz) pinto or black beans, rinsed and drained
- 1 cup cherry tomatoes, halved
- 1/2 cup black olives, sliced
- 1/3 cup pickled jalapeño slices
- 1 ripe avocado, diced
- 1/2 cup sour cream (or Mexican crema)
- Fresh cilantro leaves, for garnish
Instructions
- Preheat & Layer: Preheat your oven to 400°F (200°C). In a large cast-iron skillet, arrange half of the tortilla chips. Top evenly with half of the beans and half of the shredded cheese. Add a second layer with the remaining chips, beans, and cheese.
- Bake & Melt: Place the skillet in the oven and bake for 8 to 10 minutes, until the cheese is completely melted and bubbly.
- Add Fresh Veggies: Carefully remove the hot skillet from the oven. Scatter the halved cherry tomatoes, sliced black olives, pickled jalapeños, and diced avocado across the melted cheese layer.
- Garnish & Serve: Top with dollops of fresh sour cream and a handful of cilantro leaves. Serve immediately straight from the skillet while hot and melty!
